Beef Crockpot Recipe

1kg (or approx 2 lb) lean beef, cubed
3 stalks celery, sliced
3 large carrots, sliced
3 large potatoes, cubed
2 onions, roughly chopped
1 large red bell pepper/ red capsicum, diced
1+ ½ cups peas
1+ ½ cups corn kernels
1 tin tomatoes, diced (approx 450ml or 2 cups)
¾ cup water
1 heaped teaspoon beef gravy powder
1 heaped teaspoon parsley (fresh is best), roughly chopped
1 teaspoon salt
½ teaspoon black pepper (freshly ground is best)

Combine all ingredients in crockpot.
Set your crockpot to 'low heat' and simmer for approximately 9 hours.
Serve over steamed rice.

Serves: 6.
